Corn Spicy Soup

minutesThis yummy, spicy yet healthy homemade Corn Spicy Soup is best for winter season when there is chilled weather outside.
Ingredients
Onion (เคชเฅเคฏเคพเค) – 1 large
Carrot (เคเคพเคเคฐ) – 1 large
Capsicum (เคถเคฟเคฎเคฒเคพ เคฎเคฟเคฐเฅเค) – 1
Big Green chilli (เคนเคฐเฅ เคฎเคฟเคฐเฅเค) – 1
Sweet corn kernels – 4 cup
Tomato (เคเคฎเคพเคเคฐ) – 2+1 medium
Green onion (เคนเคฐเคพ เคชเฅเคฏเคพเค) – 1
Fresh coriander (เคนเคฐเคพ เคงเคจเคฟเคฏเคพ) – few sprigs
Lemon (เคจเฅเคเคฌเฅ) – 1
Vegetables broth – 4 cups
Coconut milk (เคจเคพเคฐเคฟเคฏเคฒ เคเคพ เคฆเฅเคง) – 2 tbsp.
Cumin (เคเฅเคฐเคพ) seeds – 1/2 tsp.
Chilli sauce – few drops
Black pepper (เคเคพเคฒเฅ เคฎเคฟเคฐเฅเค) powder as per taste.
Salt (เคจเคฎเค) as per taste.
Directions
- Dice onion (เคชเฅเคฏเคพเค), carrot (เคเคพเคเคฐ), capsicum (เคถเคฟเคฎเคฒเคพ เคฎเคฟเคฐเฅเค). Remove rib, seeds and dice big green chilli (เคนเคฐเฅ เคฎเคฟเคฐเฅเค). Chop tomato (เคเคฎเคพเคเคฐ) and green onion (เคนเคฐเคพ เคชเฅเคฏเคพเค). Take a zest and then juice of lemon (เคจเฅเคเคฌเฅ). Keep aside.
- Take a 1/4 cup of vegetable broth and in it sautรฉ diced onion (เคชเฅเคฏเคพเค), carrot (เคเคพเคเคฐ), capsicum (เคถเคฟเคฎเคฒเคพ เคฎเคฟเคฐเฅเค) and big green chilli (เคนเคฐเฅ เคฎเคฟเคฐเฅเค). Until veggie not soften for about 5-7 minutes.
- Now add corn kernels, chopped 1/4 tomato (เคเคฎเคพเคเคฐ), remaining vegetables broth, cumin (เคเฅเคฐเคพ) seeds, red chilli (เคฒเคพเคฒ เคฎเคฟเคฐเฅเค) powder, zest and juice of lemon (เคจเฅเคเคฌเฅ), few drops of chilli sauce, black pepper (เคเคพเคฒเฅ เคฎเคฟเคฐเฅเค) and salt as per taste. Mix well.
- Cook simmer for 15 minutes.
- Take a heat off and keep it too cool to room temperature. Take 1/4 mixture and make a puree.
- Now add this puree into remaining mixture and heat up. So you serve it hot.
- Pour into a soup bowl and top up with coconut milk (เคจเคพเคฐเคฟเคฏเคฒ เคเคพ เคฆเฅเคง), roughly chopped fresh coriander (เคนเคฐเคพ เคงเคจเคฟเคฏเคพ), remaining chopped tomato (เคเคฎเคพเคเคฐ) and chopped green onion (เคนเคฐเคพ เคชเฅเคฏเคพเค).
