Ingredients
Onion (рдкреНрдпрд╛рдЬ) – 1 large
Carrot (рдЧрд╛рдЬрд░) – 1 large
Capsicum (рд╢рд┐рдорд▓рд╛ рдорд┐рд░реНрдЪ) – 1
Big Green chilli (рд╣рд░реА рдорд┐рд░реНрдЪ) – 1
Sweet corn kernels – 4 cup
Tomato (рдЯрдорд╛рдЯрд░) – 2+1 medium
Green onion (рд╣рд░рд╛ рдкреНрдпрд╛рдЬ) – 1
Fresh coriander (рд╣рд░рд╛ рдзрдирд┐рдпрд╛) – few sprigs
Lemon (рдиреАрдВрдмреВ) – 1
Vegetables broth – 4 cups
Coconut milk (рдирд╛рд░рд┐рдпрд▓ рдХрд╛ рджреВрдз) – 2 tbsp.
Cumin (рдЬреАрд░рд╛) seeds – 1/2 tsp.
Chilli sauce – few drops
Black pepper (рдХрд╛рд▓реА рдорд┐рд░реНрдЪ) powder as per taste.
Salt (рдирдордХ) as per taste.
Directions
- Dice onion (рдкреНрдпрд╛рдЬ), carrot (рдЧрд╛рдЬрд░), capsicum (рд╢рд┐рдорд▓рд╛ рдорд┐рд░реНрдЪ). Remove rib, seeds and dice big green chilli (рд╣рд░реА рдорд┐рд░реНрдЪ). Chop tomato (рдЯрдорд╛рдЯрд░) and green onion (рд╣рд░рд╛ рдкреНрдпрд╛рдЬ). Take a zest and then juice of lemon (рдиреАрдВрдмреВ). Keep aside.
- Take a 1/4 cup of vegetable broth and in it saut├й diced onion (рдкреНрдпрд╛рдЬ), carrot (рдЧрд╛рдЬрд░), capsicum (рд╢рд┐рдорд▓рд╛ рдорд┐рд░реНрдЪ) and big green chilli (рд╣рд░реА рдорд┐рд░реНрдЪ). Until veggie not soften for about 5-7 minutes.
- Now add corn kernels, chopped 1/4 tomato (рдЯрдорд╛рдЯрд░), remaining vegetables broth, cumin (рдЬреАрд░рд╛) seeds, red chilli (рд▓рд╛рд▓ рдорд┐рд░реНрдЪ) powder, zest and juice of lemon (рдиреАрдВрдмреВ), few drops of chilli sauce, black pepper (рдХрд╛рд▓реА рдорд┐рд░реНрдЪ) and salt as per taste. Mix well.
- Cook simmer for 15 minutes.
- Take a heat off and keep it too cool to room temperature. Take 1/4 mixture and make a puree.
- Now add this puree into remaining mixture and heat up. So you serve it hot.
- Pour into a soup bowl and top up with coconut milk (рдирд╛рд░рд┐рдпрд▓ рдХрд╛ рджреВрдз), roughly chopped fresh coriander (рд╣рд░рд╛ рдзрдирд┐рдпрд╛), remaining chopped tomato (рдЯрдорд╛рдЯрд░) and chopped green onion (рд╣рд░рд╛ рдкреНрдпрд╛рдЬ).
