Navratan means nine gems, and Korma traditionally refers to a rich style of cooking. But Navratan Korma Recipe is not a meat dish; it is a fully vegetarian dish. It is made with nine vegetables, paneer, and nuts, or sometimes a combination of these. The main idea is to use nine key ingredients in the dish.

You can use fewer main ingredients if needed, but the closer you get to nine, the more it fits the traditional idea of Navratan Korma.

This Navratan Korma is made with nine vegetables or paneer and nuts or some time by mixing both; main thing is the dish is made up with nine main ingredients. Can have as main course meal.

  • Wash and chop green beans (เคนเคฐเฅ€ เคซเคฒเคฟเคฏเคพเค‚), capsicum (เคถเคฟเคฎเคฒเคพ เคฎเคฟเคฐเฅเคš), carrots (เค—เคพเคœเคฐ), cauliflower (เคซเฅ‚เคฒเค—เฅ‹เคญเฅ€), tomatoes (เคŸเคฎเคพเคŸเคฐ) and green chilies (เคนเคฐเฅ€ เคฎเคฟเคฐเฅเคš). Wash, peel and chop potato (เค†เคฒเฅ‚), onion (เคชเฅเคฏเคพเคœ), ginger (เค…เคฆเคฐเค•) and garlic (เคฒเคนเคธเฅเคจ). Keep aside.
  • In boiling water add chopped potato (เค†เคฒเฅ‚) and cook cover for 5 minutes. Now add peas (เคฎเคŸเคฐ) and chopped green beans (เคนเคฐเฅ€ เคซเคฒเคฟเคฏเคพเค‚), capsicum (เคถเคฟเคฎเคฒเคพ เคฎเคฟเคฐเฅเคš), carrots (เค—เคพเคœเคฐ), cauliflower (เคซเฅ‚เคฒเค—เฅ‹เคญเฅ€). Cook cover further for 5 minutes. Now drain the water from vegetables and keep aside.
  • In a pan heat 2 tbsp. clarified butter (เค˜เฅ€) on medium heat and add cumin (เคœเฅ€เคฐเคพ) seeds and sautรฉ till start crackling. Now add chopped onion (เคชเฅเคฏเคพเคœ), sautรฉ for 2-3 minute until translucent.
  • After that add chopped ginger (เค…เคฆเคฐเค•), garlic (เคฒเคนเคธเฅเคจ), tomato (เคŸเคฎเคพเคŸเคฐ) and green chilies (เคนเคฐเฅ€ เคฎเคฟเคฐเฅเคš). Also add coriander (เคงเคจเคฟเคฏเคพ) powder, red chilli (เคฒเคพเคฒ เคฎเคฟเคฐเฅเคš) powder, deggi mirch powder, turmeric (เคนเคฒเฅเคฆเฅ€) powder, garam masala, cardamom (เค‡เคฒเคพเคฏเคšเฅ€) powder and salt as per taste. Mix well and sautรฉ for a minute. Now add 1/2 cup cashews (เค•เคพเคœเฅ‚) and sautรฉ for 8-10 minutes.
  • Cool this mixture and make a puree with 1 1/2 cup of water.
  • Put this puree again in pan over low heat and add boiled vegetables. Keep cooking with often stirring.
  • On other pan add 1 tbsp. clarified butter (เค˜เฅ€), 1/4 cup cashews (เค•เคพเคœเฅ‚) and 1/4 cup golden raisins (เค•เคฟเคถเคฎเคฟเคถ). Sautรฉ for a minute on medium heat. Then add it on the above pan.
  • Now add fresh cream, fenugreek leaves (เค•เคธเฅ‚เคฐเฅ€ เคฎเฅ‡เคฅเฅ€) and cook for 4-5 minute on medium heat.
  • Garnish with remaining chopped cashews (เค•เคพเคœเฅ‚) and coriander (เคงเคจเคฟเคฏเคพ) leaves. Serve hot.
