Baingan Ka Bharta – बैंगन का भरता is a messed egg plant dish sauté in an Indian spices and tomato, onion mix. Basically this dish is made by roasting a baingan (brinjal) over a direct flame and then peel of the burned skin and meshes remaining baingan and cooks this meshed roasted baingan in tomato, onion and spices mix.

Ingredients
Eggplants (बैंगन) – 2 large
Cumin (जीरा) Seeds – ½ tsp.
Red Chilli (लाल मिर्च) Powder – 1 tsp.
Turmeric (हल्दी) Powder – ½ tsp.
Coriander (धनिया) Powder – 1 tsp.
Deggi Mirch (देगी मिर्ची) Powder – ½ tsp.
Garam Masala (गरम मसाला) – ½ tsp.
Fenugreek Leaves (कसूरी मेथी) – ½ tsp.
Tomato (टमाटर) – 3
Onion (प्याज) – 2
Garlic (लहसुन) – 4 cloves
Ginger (अदरक) – 2 inch
Green Chilies (हरी मिर्च) – 1-2
Coriander (धनिया) Leaves – 4-5
Fresh Cream (ताजा मलाई) – 1-2 tbsp.
Oil (तेल) – 2-3 tsp.
Salt (नमक) as per taste.
Directions
- Put eggplants (बैंगन) on flame of fire to roast. When eggplants (बैंगन) turn black and brown remove skin and mesh them. Keep aside.
- Chop tomato (टमाटर), onion (प्याज), garlic (लहसुन), ginger (अदरक), green chilies (हरी मिर्च) and coriander (धनिया) leaves. Keep aside.
- Heat oil in a pan and cumin (जीरा) seeds; sauté till cracked.
- Add chopped green chilies (हरी मिर्च), garlic (लहसुन), ginger (अदरक) and sauté till row aroma of garlic (लहसुन), ginger (अदरक) goes away.
- Add red chilli (लाल मिर्च) powder, turmeric (हल्दी) powder, coriander (धनिया) powder, deggi mirch powder, garam masala, fenugreek leaves (कसूरी मेथी) and salt as per taste. Mix well.
- Now add onion (प्याज) and sauté for 2-3 minute until translucent.
- Now add tomato (टमाटर) and stir till oil separates from sides. Add fresh cream and mix well.
- After that add meshed eggplants (बैंगन) and mix well. Cook for 5-10 minute on simmer.
- Garnish with slit green chilli and chopped coriander (धनिया) powder. Serve hot.
