This sweet and spicy “Spiced Masala Pumpkin” is most famous Indian dish and best go with puri but you can also have it with roti or paraths.

Ingredients

Directions

  • Dice cut raw pumpkin (เค•เคฆเฅเคฆเฅ‚). Finely chop onions (เคชเฅเคฏเคพเคœ), green chilli (เคนเคฐเฅ€ เคฎเคฟเคฐเฅเคš) and fresh coriander (เคนเคฐเคพ เคงเคจเคฟเคฏเคพ). Make puree of tomatoes (เคŸเคฎเคพเคŸเคฐ). Crush ginger (เค…เคฆเคฐเค•) and garlic (เคฒเคนเคธเฅเคจ). Keep aside.
  • In a pan heat oil and add chopped green chilli (เคนเคฐเฅ€ เคฎเคฟเคฐเฅเคš); crushed ginger (เค…เคฆเคฐเค•) and garlic (เคฒเคนเคธเฅเคจ). Sautรฉ until raw aroma of garlic (เคฒเคนเคธเฅเคจ) goes away, don’t burn.
  • Immediately add chopped onions (เคชเฅเคฏเคพเคœ), sautรฉ till golden brown.
  • Add tomato (เคŸเคฎเคพเคŸเคฐ) puree with garam masala, turmeric (เคนเคฒเฅเคฆเฅ€) powder, coriander (เคงเคจเคฟเคฏเคพ), cumin (เคœเฅ€เคฐเคพ) powder, red chilli (เคฒเคพเคฒ เคฎเคฟเคฐเฅเคš) powder, asafoetida (เคนเฅ€เค‚เค—). Sautรฉ on medium until oil start separating from sides of pan; keep staring.
  • Add salt. Mix well.
  • Add pumpkin (เค•เคฆเฅเคฆเฅ‚) pieces and mix well so masala full coat over each pumpkin (เค•เคฆเฅเคฆเฅ‚) piece; add water and cook medium for 10-15 minutes or pumpkin (เค•เคฆเฅเคฆเฅ‚) become soft enough. Don’t overcook, keep pumpkin (เค•เคฆเฅเคฆเฅ‚) pieces; not make it mesh.
  • Serve hot with roti or rice.
